Me and my crock (pot)

I have a love/hate relationship with my crockpot- some folks call it a slow cooker. (Random, no?) I love using it but I hate it because I don't know what to cook in it other than chili, soup, and roast.

A co-worker and I were talking about dinner and she mentioned her crockpot. I told her my dilemma and she pointed me to this website. This blogger decided to cook a meal each day in her crockpot and document it. OMG... so much here to try! She even has a couple of cookbooks I want to purchase when I can.

Carl and I made the Tex Mex Pot Roast for dinner yesterday and I, honestly, don't think we'll cook it any other way from now on. It is a "dump" dinner where you put it all in the pot and leave it. You don't even need to thaw the roast!

Tex Mex Pot Roast
This is what we did... it is slightly different on the website

2 pound chuck roast
1 can Rotel Chiles - undrained
1 can corn (you don't have to use the full size. The small will do) - undrained
1 can chili beans - undrained
Chili powder to taste

Put it all the crockpot, cover, and cook it on low for 8 hours.

It is AMAZING.

We put it over a baked potato, but thought about wrapping it in a flour tortilla and making a carne asada (excuse the spelling) taco. Seriously... it is the best roast I have ever made. I even brought it for lunch today.

We got the "fixins" for chicken and dumplings and gumbo as well. The ingredients are inexpensive (mostly) and healthy. AND I don't have to worry about what I am going to make at the end of a long day. It will be ready whey I get home. LOVE it.

Please please,never, ever put frozen food in a crock pot. Biggest no no there is and a good way to ruin the unit.

That said - Some people call them Crockpots because that was the original company that produced them called them [Rival made them] - same thing as people will say "Kleenex" for tissue or "Band Aid" for a plastic bandage. It's the name brand of the slow cooker. We say crockpot too.

If you like cabbage [we do!] Chop up a head of lettuce, two pounds of polsa kielbasa. Layer in the crock pot and pour 1 -2 cans of chicken broth over top. Cook, low for 5 or so hours till cooked through. So good with mashed potatoes.

Pork shoulder for pulled pork bbq sandwiches is AWESOME in the crockpot and so easy.

BBQ. Seriously the best homemade BBQ ever. Get a pork loin, rinse it off, then put it in the slow cooker, pour your favorite bbq sauce over it, cover it, and cook it on low for the next 8 hours or so. When you get home, shred it with a fork and serve on rolls. It is so tender and it falls apart when you're shredding it. We cook one of these and eat it for dinner that night and then have it for lunch the next day. Seriously cheap and seriously good.
